Common Weeds in VT (and how to eat them!)

There are a lot of uninvited plants that will be growing in these gardens. Here are some pictures of what they might look like, and some uses for them! A lot of "weeds" are actually delicious, or useful in other ways. So if you pull them, you might want to keep them for yourself! This is only a small sample of edible weeds - Google (and Laurel) could tell you about a billion more.

Crabgrass: one of the few weeds that is pretty useless, actually. Pull it up and deposit it FAR AWAY.   




Dandelion: these guys are useful in so many ways! Young leaves can be eaten like spinach (raw or cooked). The yellow flowers can be eaten too! Pick them right before you cook them, they don't keep well. An easy way to prepare is to fry them in olive oil and season with your favorite spices (e.g.: salt & garlic).





Purslane: The healthiest weed! Tastes great, has tons of omega-3s and antioxidants. Pick it, rinse the dirt off, and toss it in a stir fry! And then invite us over for dinner. :-)
